Background
If you have friends around for a barbecue or a party - these kebabs will please them. They are a little spicy but absolutely delicious. They can be prepared in advance so you can concentrate on your guests.
Ingredients
- Β½ kg lamb (leg or shoulder)
- 100g grated onion
- 1 clove of garlic (crushed)
- 1 tsp grated lemon peel
- 1 tsp rosemary (finely chopped)
- ΒΌ tsp cayenne
- Β½ tsp ground coriander
- Β½ tsp ground cumin
- 2 Tbsp red wine vinegar
- 4 Tbsp of olive oil
Instructions
- Cut the lamb into 2.5cm chunks.
- Combine the ingredients and pour over the meat cubes. Mix thoroughly, chill and marinate for 3-6 hours (or overnight).
- If you're using wooden skewers, soak them 30 minutes before cooking to stop them burning.
- Heat a grill, barbecue or griddle pan. Thread the chunks of lamb onto 4-6 skewers. Season, then grill for about 5-10 minutes, turning regularly, until they're cooked to your liking.
- Rest for a couple of minutes before serving.
- Serve with salad and/or grilled veggies or tucked into grilled pita or flatbread with salad. Drizzle with a yoghurt dressing.
