
Background
This spicy red cabbage and carrot slaw is a perfect sandwich filler or a side salad for grilled steak or fish. Itβs ready under 10 minutes. Perfect for parties and picnics too.
Ingredients
- 2 carrots
- Β½ red cabbage
- 1 small or ½ big red onion
- handful of coriander leaves
- handful toasted peanuts or cashew nuts
- 1 red chilli (de-seeded)
- juice of 1 lime
- 2 tsp groundnut oil
- 1 tsp soft unrefined sugar
Instructions
- Finely shred the cabbage and carrots. Finely slice the onion. Put these in a bowl and toss.
- Chop the coriander, nuts and chilli. Add these to the salad.
- Mix the lime juice, oil and sugar together with a pinch of salt. Pour this over the salad and toss well.
