Spicy Tomato & Pepper Soup

Background
This Spicy Tomato & Pepper Soup is just the thing for a cold evening - though I often also have it for brunch or lunch because it's quick, easy and tasty - particularly with crusty fresh bread.
Ingredients
- 2 Tbsp olive oil
- 1 large red onion
- 3 large red peppers (capsicums)
- 2 cloves garlic
- 1 fresh red chilli
- 600g ripe tomatoes
- 1 tin tomatoes
- 1 litre stock
- To garnish: fresh basil
Instructions
- Deseed the peppers then roughly chop them and the other fresh ingredients.
- Heat the oil in the pan. Add the onion, peppers, garlic & chilli. Stir for a couple of minutes then add the fresh tomatoes.
- Continue to stir for another couple of minutes then mix in the tinned tomatoes and stock.
- Put on the lid, bring up to pressure and cook for 7 (high pressure) or 10 (medium pressure) minutes.
- Allow to cool by itself. Serve sprinkled with fresh basil and (if diet allows) soured cream.
Tips
If not using a pressure cooker, add about 250 ml water or stock and simmer for about 25 minutes.© 2025 Copyright CookTogether
