Spinach and feta fritters

Background
Fritters are super-easy to make. They are lovely snacks, perfect for picnics, the lunch-box or parties (served as nibbles with dips or under toppings). These spinach and feta fritters are delicious on their own and very healthy too! They take under 15 minutes to make.
Ingredients
- 150g feta
- 100g baby spinach
- ½ cup chickpea flour or buckwheat flour
- 4-5 spring onions
- 1 handful fresh herbs (see tips)
- 2 large eggs
- 1 tsp baking powder
Instructions
- Thinly slice the spring onion.
- Process the spinach, eggs & herbs with a hand-held blender. Add the chopped spring onion, flour & baking powder, then crumble the feta into it. Mash through with a fork.
- Heat some oil in a frying pan and add dollops of one tablespoonful of batter, spread around with the back of the spoon to form a round shape. Flip them after a couple of minutes and cook for another minute or so.
- Transfer them onto a plate lined with paper towel and repeat the process with the rest of the batter.
Tips
You can use just one herb or a combination of two or more - mint, basil, parsley, dill or coriander are the most suitable ones for this recipe. You can use normal wheat-flour if gluten is not an issue for you.© 2026 Copyright CookTogether
