Spinach and halloumi omelette
Background
The other day I had to create a quick and easy lunch. I looked in the fridge and found some baby spinach, chilli peppers and halloumi cheese needing to be used up. So I created this spinach and halloumi omelette which turned out to be incredibly tasty and rather filling. The omelette was quite thick and dense β so it could easily be cut into squares and bites which would be ideal for drink parties or as picnic snacks! You can leave out the chilli if you donβt want it to be too spicy, perhaps add some nutmeg instead?
Ingredients
- 4 large eggs
- Β½ block of halloumi (approx. 100g)
- 1 Tbsp olive oil
- 1 clove of garlic
- 11 red chilli or Β½ tsp dried chilli flakes
- 2 handful of baby spinach
Instructions
- Mix the eggs in a bowl,then coarsely grate the cheese into the mixture.
- Roughly chop the garlic and chilli.
- Heat the oil in a non-stick frying-pan. Add the garlic and chilli, stir for 30 seconds. Add the egg mixture, let it spread out evenly. Turn the heat off, put a lid on, then cook for about 5 minutes.
- When the surface of the omelette is no longer runny (but not solid yet), add the spinach and put the lid on again for a couple of minutes.
- Fold the omelette in half and keep cooking for another minute or so, until the spinach has wilted.
- Serve warm or let it cool and cut into bite sided squares.
