Squash and bacon bake
Background
For a midweek family supper I highly recommend this squash and bacon bake - it’s very easy to make, loved by kids and adults, it’s hearty and full of healthy veggies! Perfect meal all year around! If you like your food spicy, do add the chilli - it goes really well with butternut squash! (you can use chilli flakes too - just add some to your own portion if the rest of the family doesn’t like chilli)!
Ingredients
- ½ butternut squash
- 1 red onion
- ½ red chilli (optional)
- 1 tsp of chopped rosemary leaves
- 6 rashes of smoked bacon
- 1 clove of garlic, minced
- 100g curly kale or spinach
Instructions
- Preheat the oven to 190°C.
- Peel and dice the squash. Peal then cut the onion into 8 wedges. Deseed and slice the chilli if used.
- Put the chopped vegetables in a baking try and add a spoonful of olive oil together with the rosemary. Mix well and bake for 20-25 minutes or until the squash is tender.
- Meanwhile chop the bacon and the garlic. Heat a drop of oil in a frying pan and add the bacon and garlic. Cook until the bacon is crispy. Add the spinach or curly kale. Put a lid on, turn off the heat and rest.
- When the squash is tender mix in the bacon mixture and cook in the oven for a further 5-8 minutes until the squash is golden.
- Serve warm with wholesome, crusty bread and a green salad, if you like.
