Steamed fish with leek and peas

Background
In this recipe white fish fillet is steamed over braised leek and peas - making this dish a healthy meal - and it takes so little time to prepare! Serve it with brown rice, quinoa or couscous or just a slice of wholemeal bread. Absolutely delicious!
Ingredients
- 2 white fish fillets (e.g. haddock or cod)
- zest and juice of half a lemon
- 1 small clove garlic
- 2 tsp chopped parsley
- 1 large leek
- 100g green peas
- 150 ml vegetable stock
- 2 tsp olive oil
Instructions
- Grate the lemon zest and mince the garlic, then mix together with the parsley. Set aside.
- Slice the leeks thinly.
- Heat the oil in a pan and sautΓ© the leek gently until it's tender. Add the peas and the stock.
- Bring to the boil and put the fish on top of the vegetables. Season to taste and sprinkle with the parsley mixture and half of the lemon juice. Simmer, under a lid, for about 5 minutes or until the fish is cooked through.
- Serve with the remaining lemon juice drizzled over it.
