Steamed scallops with black beans

Background
These steamed scallops with black beans are incredibly easy to make and absolutely delicious. They're not only suitable in a Chinese New Year celebration menu but can be served as a starter or nibble on other occasions too - such as Valentine's day, Anniversaries, dinner/drinks parties and so on.
Ingredients
- 500g scallops (cleaned)
- 2 Tbsp fermented black beans
- 2 Tbsp chopped garlic
- 2 Tbsp chopped ginger
- 1 Tbsp Shaoxing rice wine or dry sherry
- 1 Tbsp light soy sauce
- Banana leaves (or baking paper)
- To serve: chopped spring onions
Instructions
- Finely chop the black beans then, in a small glass bowl, mix with the chopped ginger & garlic, soy sauce and rice wine.
- Line a bamboo steamer with a banana leaf or baking paper.
- Wash the scallops, then place these tightly next to each other in the steamer. Pour a spoonful of the sauce on top of each scallop. Cover with the leaf/paper to create a parcel & put the lid on.
- In a wok, add 5 cm of water, bring to a boil. When the water is boiling, put in the bamboo steamer, making sure it doesn't touch the water. Steam over high heat for 10 minutes or so.
- Carefully take the steamer out of the wok, put it on a plate. Unwrap the parcel and serve.
