Sticky pork medallions
Background
These Chinese style sticky pork medallions are perfect for dinner parties or laid-back family meals. You can marinate the pork ahead, then theΒ cooking is super easy. If you donβt want to bake them, just griddle/grill/ barbecue them longer, whilst brushing regularly with the marinade. Serve with boiled rice and stir-fried veggies.
Ingredients
- 400g pork fillet
- β cup passata
- 1 tsp Chinese five spice
- 2 Tbsp soy sauce
- 2 Tbsp honey
- 1 tsp garlic powder
- Salt and pepper
- Chili flakes to taste
Instructions
- Preheat the oven to 180C.
- Cut the pork fillet into 1 cm slices and place them in a shallow dish. Combine the passata, honey, soy, garlic powder and, Chinese five spice, and chilli (if used) in a bowl.
- Pour it over the pork and marinate for at least 30 minutes or longer.
- Lightly oil a wok, griddle pan or BBQ. Brush the marinade off the pork (but not completely) and seal the medallion for a minute on each side, then place them in a baking dish next to each other and pour over the marinade.
- Cover the dish with foil and bake for 20 minutes. Take off the cover and cook for another 5 minutes.
- Serve warm.
