Stir-fried bean sprouts with green beans

Background
If you’re after a super-easy side dish for a Chinese menu, do try these stir-fried bean sprouts with green beans. It’s ready in just 10 minutes, needs very little preparation and can be cooked in advance or at the last minute for your meal. It’s vegan, dairy-free and gluten-free too.
Ingredients
- 1 Tbsp vegetable oil
- 1 Tbsp grated ginger
- 100g green beans
- 1 Tbsp soy sauce
- ½ tsp brown sugar (or less)
- 1 tsp sesame oil
- 250g bean sprouts
- Spring onion to garnish ( optional)
Instructions
- Grate the ginger and cut the beans into bite-sized pieces.
- Heat the oil in a wok over medium heat. When hot, add the ginger and stir-fry for 30 seconds, then add the beans and stir-fry for 3 minutes. Add the soy sauce, sugar and sesame oil. Stir for 10 seconds or so, then add the bean sprouts. Stir-fry for another 3-5 minutes and serve.
- Garnish with some chopped spring onion, if liked.
- Serve hot.
