Stir-Fry Beef with Ginger and Tomato
Background
The beauty of using a wok is that it's so quick, easy, tasty and healthy! We tend to associate woks with Chinese cooking but they're used extensively all over South-East Asia - this particular recipe is based on one that originates from Malaysia. It's got a lovely refreshingly zesty flavour. You can serve it with rice - or pasta if you prefer.
Ingredients
- 500g lean beef steakFor the marinade:
- 2 tsps light soy sauce
- 2 tsps Shaoxing rice wine
- 1 tsp sesame oil
- 2 tsp cornflour
- For the frying:
- 3 Tbsps groundnut oil
- 1 Tbsp chopped fresh ginger
- 250g chopped onion
- 3 chopped garlic cloves
- For the sauce:
- 1 tin tomatoes (about 450g)
- Β½ tsp chilli flakes
- salt & freshly ground pepper
- 1 tsp sugar
Instructions
- Slice the beef into thin slices about 4cm long.
- Put slices into a bowl and add the marinade ingredients. Stir well and leave for at least 15 minutes to marinate.
- Heat a wok until very hot, add oil until smoking, then take the beef from the marinade and stir fry for about 2 minutes, Remove from the wok and set aside.
- Reheat the oil in the wok and stir fry the onion, garlic & ginger for another couple of minutes.
- Add the remaining ingredients & mix thoroughly. Turn down the heat, cover and simmer for about 15 minutes.
- Add the meat back to the wok and stir well to reheat.
- Serve scattered with fresh coriander.
