Strawberry oat cookies
Background
These raspberry oat cookies are vegan, dairy-free, sugar-free and high in fibre. I used gluten-free rolled oats but you can use regular oats if gluten is not a problem for you. These healthy cookies are perfect for breakfast, afternoon tea, picnics, parties or snacking. You can also add some chopped nuts to the batter β almonds, cashews, and hazelnuts would work well.
Ingredients
- 3 ripe bananas
- 1.5 cup rolled oats (gluten-free if needed)
- 1 tsp vanilla essence
- 1 Tbsp cocoa powder
- 1 cup chopped strawberries
Instructions
- Preheat the oven to 180Β°C and line a baking tray with parchment paper.
- In a bowl, mash the bananas with a fork.
- Add the oats, vanilla and cocoa powder, then mix well. Add more oats, if the mixture is not soft.
- Let the mixture rest for a few minutes, then add the raspberries and mix again.
- Using your hands, make about 10 equal-sized balls, then press them between your palms. Place these on the prepared baking tray.
- Bake in the oven for approx. 20 minutes until golden.
- Let them cool on a wire rack, then serve.
