Chicken soup with green vegetables

Background
If you like chicken soup, this version could become a regular meal for you, especially during the summer months. It's super-easy to make and tastes really yummy and healthy.
Ingredients
- 1litre chicken stock
- 10g tarragon
- 4 chicken thigh fillets
- 1 zucchini (courgette)
- 150g green peas (fresh or frozen)
- 100g baby spinach
- 3 spring onions
Instructions
- In a saucepan bring the stock to the boil. Add the tarragon and the chicken then cook for 15 minutes.
- Meanwhile, slice the zucchini & spring onion and rinse the spinach.
- Remove the chicken & tarragon from the soup, discard the tarragon.
- Add the peas and zucchini slices to the stock, cook for two minutes , then add the spinach leaves. Cook for about 1-2 minutes.
- Meanwhile, slice the chicken.
- Put the chicken back to the soup to warm through.
- Serve sprinkled with the spring onion slices.
