Summer garden salad with sheep cheese

Background
Sheep cheese has a sharp edge to it so it complements sweet salads very well. This Summer garden salad with sheep cheese is perfect for BBQs, garden parties, or serve it with flatbread with leftover roasted/fried/grilled meat. If you donβt like garlic, add a spoonful of mustard to the dressing instead.
Ingredients
- 3 ripe tomatoes
- Β½ cucumber
- Β½ red bell pepper
- 1 shallot
- 50g soft sheep cheese, crumbled
- Mint leaves
- For the dressing
- 2 Tbsp extra virgin olive oil
- Juice of Β½ lemon
- 1 tsp honey
- 1 small garlic clove, minced (optional)
- Salt & pepper
Instructions
- Cut the cucumber, red pepper, tomatoes and onion into small pieces and toss them in a bowl.
- Mix the dressing in another bowl or a cup, taste and adjust the seasoning and sweetness to your liking.
- Pour the dressing over the salad, then crumble the cheese on top.Toss gently.
- Garnish with mint leaves and serve.
