Sweet potato and broccoli curry

Background
This super easy, vegan sweet potato and broccoli curry is ready in just 20 minutes. Serve with basmati rice or in an Indian menu.
Ingredients
- 1 onion
- 2 cloves of garlic
- 1 inch ginger
- 2 medium sweet potato
- 2 carrots
- 1 Tbsp medium curry powder
- 1 tsp garam masala
- Β½ tsp ground pepper
- 300 ml passata
- 500 ml vegetable stock ( approx.)
- 1 head broccoli
- Coriander leaves to serve
Instructions
- Thinly slice the onion, ginger and garlic.
- Heat the oil in a saucepan, then gently soften the onion. Add the garlic and ginger and cook for another minute.
- Meanwhile peal and chop the sweet potatoes, carrots and broccoli.
- Add the sweet potatoes and carrots to the pan together with the spices. Stir for a minute or so.
- Add the passata and enough stock to cover the veggies. Bring to the boil, then gently simmer for about 15 minutes, or until the vegetables are tender.
- Serve with chopped coriander leaves.
