Background
Tarragon and chicken is a classic combo. The following tarragon baked chicken is very easy to make, as it doesn’t require much preparation or cooking time. Perfect for a midweek family supper served with your favourite side dishes - here I served it with mashed potatoes and steamed vegetables.
Ingredients
- 4 chicken breast fillets or whole chicken legs (with skin on)
- 1 lemon
- 2 cloves of garlic
- 1 handful of fresh tarragon
- 2 Tbsp olive oil ( or oil spray)
- Salt, pepper
Instructions
- Preheat the oven to 190°C.
- Cut the lemon into 1cm rings.
- Cut the garlic into 4 slices.
- Cut slits in the chicken meat (underneath) and push the garlic pieces into the insertions.
- Loosen the skin and tuck 1 lemon ring and 1 stalk of tarragon underneath. Season with salt and pepper, and place them in a baking tray, on top of the remaining lemon rings. Drizzle with some oil and season with salt and pepper.
- Bake for 35-40 minutes until the skin is golden and crispy.
- Serve with the jus poured over the chicken or the sides dishes.
