Background
This very simple yet very tasty beef stir-fry can be on the table within 10 minutes. Served with rice it's an ideal supper on busy days. It can also be served as part of a Thai menu for a dinner party.
Ingredients
- 300g sirloin steak, cut into thin strips
- 1 onion, cut into chunks
- 2 Tbsp Thai green curry paste
- 100g green beans or mangetout
- 150ml water
- A handful of Thai basil
Instructions
- Heat a wok to piping hot. Stir-fry the beef without any oil fry for 2 minutes, then, using a slotted spoon, transfer to a plate. Leave the resulting juices in the wok.
- Heat the wok again and soften the onion, then add the curry paste and water. Put back the beef, add the green beans and cook for 5 minutes. Season to taste.
- Sprinkle with the basil leaves, cook for a further 30 seconds, then serve immediately.
Tips
- If you can't get Thai basil use normal basil.
- You can make this recipe with other veggies too - such as sliced red pepper, cabbage, carrots, broccoli, mushroom etc. And you can add more than one vegetable if you like. (I made it with green beans, red pepper and mushrooms)
