Background
I like making Asian-style lettuce wraps for parties & barbecues because they are incredible easy to prepare and are very tasty. These carrot & radish lettuce wraps are not only simple and delicious but also very versatile- you can have them like this as an appetizer, or add some grilled meat /seafood, rice noodles or cashew nuts to them et voilà you have a meal!
Ingredients
- 2 Tbsp Thai sweet chilli sauce
- zest & juice 1 lime
- 1 tsp fish sauce
- 1 Little Gem or small Romaine lettuce
- 1 large carrot
- 1 handful of radishes
- 3 spring onions
- 1 red chilli (optional)
- 1 handful of coriander (cilantro)
Instructions
- Cut the carrot and radishes into match-stick batons. Slice the spring onions diagonally.
- Separate the little gem into leaves, rinse and drain. Wipe each with a clean tea towel and put them on a serving dish.
- Finely chop the chilli, if used.
- Put all the chopped vegetables into a missing bowl.
- Mix the chilli sauce with the, fish sauce, lime zest and juice.
- Toss the vegetables with the dressing. Let the flavours infuse for about 15 minutes.
- Chop the coriander and add it to the carrots. Season to taste.
- Spoon the vegetable mixture into the lettuce leaves and serve.
