Thai-style baked sea bass fillet

Background
This Thai-style baked sea bass fillet is super easy to make, yet it’s delicate, fragrant and delicious. So it’s the ideal dish for special occasions (Anniversaries, Valentine’s Day, Mother's day etc) or for laid-back dinner parties. Best served with Jasmine rice and stir-fried vegetables.
Ingredients
- 4 sea bass fillets
- 1 lime
- 1 tsp sesame oil
- 1 Tbsp fish sauce
- 1 lemongrass, thinly sliced
- 1 piece ginger, grated
- 2 garlic cloves, grated
- 1 chilli pepper, thinly sliced
- 4 spring onions, thinly sliced
- 1 small handful coriander leaves, chopped
Instructions
- Preheat the oven to 180°C.
- Mix the sesame oil, fish sauce, ginger, garlic and lemongrass in a bowl.
- Cut the lime in half and squeeze out its juice into the mixture, then slice it into thin rings.
- Put the lime slices in a baking dish.
- Dip the bass fillet in the sauce, then lay them on top of the lime rings. Pour over the remaining sauce, then scatter the spring onions and chilli slices on top.
- Season with black pepper, then cover the dish with foil.
- Put the dish in the oven and bake for 10-15 minutes, until the fish is tender.
- Scatter the coriander leaves on top and serve.
