Background
These simple gluten-free and dairy-free tofu fritters make really nice snacks during the day or can be served at mealtimes with soups and stews instead of bread. With some topping they also make nice party nibbles (though make them smaller in this case). Perfect for picnics too!
Ingredients
- ½ cup of soya milk
- 2 eggs
- 1½ chickpea flour (approx)
- ½ cup crumbled tofu (about 100g)
- 1 bunch spring onions
- 1 Tbsp toasted sesame seeds
- 1 tsp soy sauce
Instructions
- Finely chop the spring onions.
- Beat the eggs slightly and mix with ½ cup of flour and the soya milk.
- Crush the tofu with a fork, add to the mixture. The batter should be thick and light, but not a dough - add more flour if needed.
- Stir in the spring onions, sesame seeds and soy sauce .
- Heat the oil in a frying pan, add 1 Tbspful of the batter, pressing down the top. Cook on both sides until golden brown.
- Drain them on paper kitchen towel.
