Tofu and green beans omelette

Background
If you like Japanese-style food, you’ll love this simple tofu and green beans omelette! It’s very easy to make, it’s also healthy and rather tasty. Serve it with some crispy salad or slaw.
Ingredients
- 50g firm tofu
- 50g green beans
- 3 small eggs
- 2 tsp Tamari light soy sauce
- 1 tsp toasted sesame oil
- 1 tsp sesame seeds
- 1 tsp vegetable oil for cooking
Instructions
- Cut the tofu into 1 cm cubes. Cut the beans into 2 cm pieces. Put them in a small bowl, add half of the soy sauce, the sesame oil and half of the sesame seeds. Toss well.
- Lightly whisk the eggs in another bowl. Add the remaining sesame seeds and a few drops of soy.
- Heat a non-stick frying pan and add the marinated tofu and beans. Stir-fry gently for a couple of minutes, until the tofu is crispy and the beans are tender. Move them to a plate.
- Add the vegetable oil to the pan and turn the heat up. When hot, pour in the egg and cook until it’s almost set.
- Spoon over the tofu and bean mixture, fold in half and cook for another minute or so over low heat.
- Drizzle with the remaining soy and serve immediately.
