Background
This tomato, rocket and crayfish salad makes a perfect starter in a celebratory menu. It’s incredibly simple dish – the secret is to use good quality ingredients such as mixed cherry tomatoes ( purple, red, yellow) and aged balsamic vinegar. These, together with the nutty rocket salad complement really well the sweet crayfish meat! Absolutely delicious!
Ingredients
- 100g ready-to-eat crayfish tails
- 2 handful of rocket
- 2 handful of mixed cherry tomatoes
- 1 shallot
- 1 Tbsp good quality of balsamic vinegar
- 1 Tbsp olive oil
- Squeeze of lemon juice
Instructions
- Finely chop the onion and halve the tomatoes.
- Scatter the rocket into a serving dish then add the onion and tomato pieces.
- Mix the dressing, season with salt and pepper and drizzle over the salad.
- Squeeze a drop of lemon juice and serve.
