
Background
It takes less than 10 minutes to throw together this tuna and bean salad! Itβs also delicious and healthy! Perfect for picnics, parties or for lunch on a piece of wholesome toast. I used butter beans but cannellini, haricot or borlotti beans are just as good.
Ingredients
- 1 red onion
- Β½ red pepper
- 1 tin of butter beans
- 1 small tin of tuna steak in water (approx. 150g)
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 Tbsp drained capers
- 1 clove of garlic (optional)
- 1 handful of flat parsley leaves, chopped
Instructions
- Finely slice the red onion and chop the red pepper. Scatter them into a large mixing bowl.
- Drain the tuna and beans, add them to the chopped vegetables. Add the chopped parsley.
- Mix the oil and vinegar with the capers and garlic if used. Season with salt and pepper.
- Toss the salad with the dressing. Season more to your liking.
- Serve at room temperature.
