Turkey breast stir-fry

Background
I found some water chestnuts in the back of the cupboard that I'd forgotten about. They reminded me of a turkey breast stir-fry that I'd made some years ago and had also forgotten about. I'm glad I resurrected it because it's very quick & easy but subtly delicious.
Ingredients
- 400 gm turkey breast, cut into thin strips
- 1 tsp groundnut oil
- 4 garlic cloves, finely chopped
- ΒΌ tsp paprika or chilli pepper
- 1Β½ Tbsp gram (chickpea) flour
- ΒΌ teaspoon salt
- 225 ml chicken stock
- 1 tsp sesame oil
- 200g fresh broccoli
- 1 red capsicum (bell pepper) cut into thin strips
- 1 small can water chestnuts, drained
- 2 Tbsp soy sauce
Instructions
- Heat the groundnut oil in a hot wok until it smokes then add the turkey strips.
- Stir fry thoroughly for about 5 minutes then remove to a bowl.
- Mix together the garlic, gram flour, paprika, salt and stock in a mixing bowl.
- Reheat the wok, add the sesame oil and when smoking stir-fry the capsicum & broccoli for a couple of minutes. Add the water chestnuts, fry for another minute then add the stock mixture. Bring to the boil and allow to thicken.
- Add the turkey strips and soy sauce, warm through for a couple of minutes.
- Serve with rice or part of a menu.
