Turkey, courgette and red pepper skewers

Background
If you need a quick and easy recipe for Summer BBQs and grilling,try these Turkey courgette and pepper skewers. If you don’t have time to marinate them for hours, these skewers can be put together within minutes and cooked immediately. Serve them with salad, perhaps in flat bread.
Ingredients
- 300g Turkey breast, diced
- 2 small courgettes
- 1 clove of garlic, minced
- 1 large red bell pepper
- 1 Tbsp dried oregano, marjoram or thyme
- 2 tbps olive oil
- Juice of ½ lemon
- Salt and pepper
- Wooden or metal skewers
Instructions
- If you’re using wooden skewers, soak them in water for 30 minutes.
- Cut the meat, courgette, pepper into bite-sized pieces and put them in a mixing bowl. Add the garlic, oil, dried herbs, lemon juice and toss well. Marinate for up to 4 hours in the fridge or you can cook them immediately.
- Heat your BBQ, grill or griddle pan.
- Season the marinating turkey mixture with salt and pepper.
- Thread the meat, pepper and courgette pieces, alternating and tightly onto the skewers.
- Cook them for approx 10 minutes, turning the skewers regularly, until the turkey is cooked through properly and the veggies are lightly charred.
- Serve warm, with a squeeze of lemon juice.
