Background
Tzatziki is one of the basic sauces and dips in SE-Europe and the Middle East. It’s made with yoghurt, cucumber, garlic and fresh herbs. They normally serve it as a dip with pita or a sauce for kebabs, falafels etc. It’s an ideal condiment in a Mezze menu, or at barbecues, parties and picnics. It’s actually really easy (and cheaper) to make yourself - and much more tasty than the ready-made ones! Here is an authentic, basic tzatziki recipe (you can make it with mint, dill or flat parsley depending on your meal).
Ingredients
- 1 cucumber
- 200 ml Greek yoghurt
- 2 cloves of garlic
- Salt& pepper
- Olive oil (optional)
- 1 Tbsp Fresh herbs (mint or dill)
Instructions
- Finely grate the cucumber and put it in a bowl. Add a teaspoon of salt and soak for minimum 15 minutes (up to an hour). Squeeze out the liquid, then put it in a mixing bowl.
- Mince the garlic and finely chop the herbs. Add these to the cucumber, then pour over the yoghurt. Combine well. If it’s too thick, add some olive oil, kefir or lemon juice.
- Taste and adjust the seasoning.
- It’s best to rest in the fridge, covered, for 10-15 minutes before serving (if time allows).
- Garnish with herb leaves, olives (optional) and ground pepper just before serving.
