Vegan apple and dates cobbler

Background
This vegan apple and dates cobbler is similar to apple crumble but the topping is richer and crunchier. You can use the same recipe forΒ a vegetarian version - just use butter and buttermilk instead of margarine and oat milk. Serve it with vanilla ice cream or custard.
Ingredients
- 4 apples
- 1 tsp cinnamon
- 8 dates, chopped
- β cup raisins (optional)
- Β½ cup chopped roasted hazelnuts (optional)
- 1 glass apple juice
- 3 Tbsp muscovado sugar
- For the cobbler:
- 1 cup self-raising flour
- 1 tsp cinnamon
- 4 Tbsp dairy free spread or soft margarine, cubed
- Β½ cup oat
- 4 Tbsp muscovado sugar
- 1 cup oat milk or cream
Instructions
- Preheat the oven to 180Β°C.
- Cut the apples into small chunks, then scatter them into a baking dish. Add the raisins, dates, hazelnuts, cinnamon, sugar and toss well.
- Pour over the apple juice and rest.
- In a bowl, mix the flour and cinnamon together. Rub in the margarine until the mixture resembles coarse crumbs, then mix in the oat and sugar. Gradually add the oat milk and mix with a palette knife, until you get a sticky, wet dough.
- Make balls from the dough and put them over the apple mixture, tightly next to each other.
- Bake in the middle of the oven for about 35-45 minutes, until it looks golden.
