Vegan banana and walnut muffin

Background
The recipe of this vegan banana and walnut muffin is super easy and only needs one dish. Itβs healthy and you can use gluten-free flour too if your diet requires it. If the bananas are very ripe, you wonβt need any maple syrup.
Ingredients
- 3 ripe bananas
- 1 cup flour
- 1 tsp baking powder
- 2 Tbsp maple syrup
- 1 handful walnuts
- 1 tsp cinnamon
- 1 tsp of vanilla
Instructions
- Preheat the oven to 180Β°C. Prepare 6 silicon muffin cases or line a muffin tin with paper cases.
- Mash the bananas with a fork then add the flour and baking powder.
- Mix well, then add the maple syrup, oil, vanilla and cinnamon. Combine well.
- Finely chop the walnuts and fold into the batter.
- Divide the batter equally between the prepared cases, then bake the muffins in the middle of the oven for 20-25 minutes.
- Let them cool in the cases, then transfer them to a wire-rack to cool completely.
