Vegan Christmas apple pies

Background
Not everyone likes mince pies, so you can make mini apple pies instead! These Vegan Christmas apple pies are really easy to make - you can use shop-bought or home-made one. You can add raisins and/or nuts to the filling - I normally add a spoonful of Calvados or rum just to jazz it up.
Ingredients
- 2 Granny Smith apples
- squeeze of lemon juice
- 1 tsp cinnamon
- 3 Tbsp muscovado sugar
- 2 Tbsp raisins (optional)
- 2 Tbsp ground walnuts (optional)
- 1 Tbsp rum or brandy (optional)
- 1 sheet ready-rolled shortcrust pastry (vegan)
Instructions
- Preheat the oven to 180°C. Prepare a scone or shallow cupcake tin.
- Peel, core and chop the apples into thin slices or small cubes. Squeeze some lemon juice on top and combine. Add the walnuts and raisins if used (you can add a spoonful of brandy or rum if you like). Set aside.
- Combine the sugar and cinnamon, then combine with the apple mixture.
- Unroll the pastry. Using a glass or mug, cut out a circles, big enough to fill the holes of the tin. Gently press the disks into the holes, then fill them evenly with the apple mixture.
- Using a cookie cutter, stamp out star/tree shapes from the leftover pastry. Put these on top of the pies (the tips of the stars should meet the rim of the pies)
- Put the tin into the oven and bake the pies for about 15 minutes, or until the pastry is golden brown.
- Transfer the pies onto a wire rack to cool.
- When cooled, dust them with icing sugar and serve.
