Vegan gluten-free banana cookies

Background
These gluten-free banana cookies are also dairy-free, egg-free and refined sugar-free. Most importantly they are yummy and easy to make! They are lovely and healthy snacks during the day or ideal for kids parties!
Ingredients
- 2 medium bananas
- 1 cup brown rice flour
- 1 tsp baking powder
- 2 Tbsp agave syrup (cold pressed)
- 1 Tbsp sunflower oil (cold pressed)
- Β½ Tbsp ground cinnamon
Instructions
- Preheat the oven to 200°C.
- Line a baking sheet with baking paper.
- Puree the bananas in a blender then spoon it into a mixing bowl.
- Add the oil and the agave nectar, mix well. Add the flour, baking powder and cinnamon and mix with a wooden spoon.
- Spoon little dumplings onto the baking sheet, then flatten these slightly with the base of the spoon. (Or form balls from the mixture and flatten them between your palms.)
- Bake until golden brown for about 15 minutes then move to a wire rack to cool.
Tips
