Vegan Gluten Free Bread Machine Loaf
Background
Over the years I've tried quite a few different recipes to make a decent Vegan Gluten Free Bread Machine Loaf but I've never been particularly satisfied with them. Several were ready prepared mixtures bought in various supermarkets others were ones I tried mixing myself using a variety of gluten substitutes. I've at last found an incredibly simple combination of ingredients that works beautifully and creates a loaf with which the family and I are absolutely delighted!
Ingredients
- 400 ml lukewarm water
- 2 Tbsps olive oil
- 450g of white gluten-free flour
- 1Β½ teaspoons xanthan gum
- 2ΒΌ teaspoons dried quick yeast
- 1 TbspΒ ground chia seeds
- 1 teaspoon salt
Instructions
- The ingredients should be put into the pan of your bread maker in the order shown above
- If your machine has a gluten-free setting then use that, otherwise choose the quick or easy-bake setting
- When the cycle is complete remove the loaf from the machine onto a wire rack and let cool before slicing
Tips
- For a pleasing appearance to the top of the loaf try drizzling some olive oil onto it after the rise section of the cycle - before the actual bake.
- You can also sprinkle some seeds on at this stage
