Vegetable pilaf with coconut milk

Background
Vegetable pilaf is rice cooked with vegetables and spices. This recipe uses coconut milk to cook the rice and vegetables which give a different taste to the vegetable pilaf. It goes extremely well with gravies especially chicken gravy.
Ingredients
- 2 Cups Basmati rice
- 1 cup Vegetables (Carrots, peas, corn, beans, potato,etc) chopped
- 1 cup Coconut milk
- 2½ cups Water
- A sprig of mint leaves (washed and chopped)
- 1" Ginger (Grated)
- 4 Cloves garlic (Grated)
- 1 Green chilli
- 2 Onions (Sliced)
- 1 Tbsp Oil
- Salt as required
- 3 cloves
- 2 Cardamoms
- 1" Cinnamon
Instructions
- Heat oil in a pan and cloves, cardamom and cinnamon.
- Add the onions and green chilli and fry until brown.
- Add mint leaves and fry for a minute.
- Add ginger and garlic and fry for half a minute.
- Add the vegetables and mix.
- Add the rice, coconut milk, salt and water and mix.
- Pressure cook the rice with vegetables according to your cooker specifications. Or cook on very low flame under lid until all the vegetables and rice are cooked.
- Serve hot.
