Vegetable Pulao (Vegetable rice)

Background
Vegetable pulao is a healthy riceΒ recipe with vegetablesΒ and very tasty too. It can be made easily as a main course for a party or any large gathering. It goes well with any Indian curry or raita.
Ingredients
- 2 Cups basmati rice
- 2½ Cups water
- Salt as required
- 1 Tbsp Oil
- 1½ Onion sliced
- 1 tsp Ginger garlic paste
- 2 Green chillies
- 3 Cloves
- 2 Cardamom
- 1" Cinnamon stick
- 1 Bay leaf
- Vegetables (Carrot, beans, diced potatoes, peas, etc)
- 5-6 Mint leaves chopped
- A sprig of coriander leaves chopped
- 1 tsp lime juice
Instructions
- Heat oil in a pan on medium heat. Add cloves, cinnamon, cardamom and bay leaf.
- Add the sliced onion and fry until brown.
- Add the green chillies, ginger garlic paste, mint leaves and coriander leaves and fry.
- Add the vegetables and fry for a minute.
- In an electric rice cooker, add the rice, water, salt, lime juice and the vegetables and mix.
- Cook the rice and vegetables together.
- Serve hot with curry or raita.
