Vegetable upma

Background
Vegetable upma is very easy to prepare and is a popular south Indian breakfast dish. It's tasty and healthy too.
Ingredients
- 1 cup semolina
- 2 cups water
- 1 medium size onion chopped
- 2 green chillies chopped
- 1 inch ginger chopped
- 1 medium size carrot
- 4-5 fresh French beans
- Salt to taste
- For seasoning:
- 3 Tbsp spoons oil
- 1 tsp mustard seeds
- 1 tsp black gram
- 1 sprig curry leaves
Instructions
- Dry roast the semolina till hot to touch.
- Chop the vegetables finely and keep aside.
- Heat oil in deep bottomed pan.
- Add mustard seeds, when they start to sputter, add black gram lentils and curry leaves.
- Add chopped onions and sautΓ© till translucent.
- Add ginger, green chillies and sautΓ© for few minutes.
- Add chopped vegetables and cook covered for 2-3 minutes.
- Add 2 cups of water and bring to boiling point. Add salt to taste.
- Reduce the flame to low. Add semolina gradually with one hand and stir continuously with the other hand so that it does not form lumps.
- Cover and cook on low flame for 5 minutes. Once the water is absorbed, mix well.
- Serve hot with any chutney of your choice.
Tips
Semolina once heated starts burning fast. Keep stirring continuously and be careful not to burn it.© 2024 Copyright CookTogether
