Vegetable noodles

Background
Vegetable noodles is a very popular indo Chinese dish. It is very easy to prepare and also tastes good. You can even use whole wheat noodles to make it even healthier.
Ingredients
- 100 gm Chinese noodles
- 1 Tbsp. finely chopped garlic
- 1 medium sized onion sliced
- Β½ cup cabbage finely sliced
- 1 carrot julienned
- 1 medium size capsicum
- 2 Tbsp. oil
- 2 tsp soya sauce
- 1 tsp chilli sauce
- 1 tsp vinegar
- Β½ tsp pepper powder
- Salt to taste
- Β½ cup spring onion finely chopped
Instructions
- Boil water in a vessel.
- Add 1 tsp oil and 1 tsp salt to the water.
- Add noodles to the boiling water. Stir now and then to prevent the noodles from sticking together.
- Do not overcook the noodles. Noodles should be firm but not hard.
- Drain the noodles in a colander and run cold water over it to prevent from sticking.
- Cut the vegetables into thin strips and keep aside.
- Heat oil in a pan, add chopped garlic and sautΓ© for 2 seconds.
- Add onions and sautΓ© for few more seconds on a high flame.
- Add all the vegetables and sautΓ© them on high flame. They should not be over cooked and should retain the crunchiness.
- Add soya sauce, chilli sauce, vinegar and mix well.
- Add the cooked noodles, salt, pepper and toss everything together, so that the noodles get coated with the sauces well.
- Switch off the flame and garnish with the spring onion greens.
- Transfer to serving bowl and serve hot.
