Ven pongal
Background
Ven pongal is a traditional South Indian breakfast dish. It is easy to make and is also a popular comfort food.Though my husband does not like rice based breakfast dishes, I make it for my little one as it is filling and healthy. Sometimes I add vegetables like carrots, French beans and potatoes to make it more nutritious.
Ingredients
- 1 cup raw rice
- Β½ cup split yellow lentils
- 4 cups water
- Salt to taste
- For tempering:
- 1 tsp ginger grated
- 1 tsp pepper corn crushed
- 1 tsp cumin seeds
- 2 Tbsp clarified butter
- 1 pinch asafetida
- 6-7 cashew nuts
- 2 green chillies slit and cut
- 1 spring curry leaves
Instructions
- Heat a pan, add rice, yellow lentils and dry roast for 3 minutes. Allow it to cool.
- Wash the mixture and add 4 cups of water. Add salt to taste and pressure cook till soft and mushy.
- Take a pan, put the clarified butter and add cashew nuts. Fry till brown.
- Add grated ginger, crushed pepper corn, cumin seeds, asafetida, curry leaves. Saute for 2 minutes.
- Add the tempering to the cooked rice and lentil mixture. Mix well and serve hot with any pickle or chutney.
