Venison steak with cranberry and orange sauce

Background
For special occasions or dinner parties this venison steak with cranberry and orange sauce is perfect recipe - itβs delicious, very easy to make and the sauce can be prepared in advance! Serve it with a mash and a green salad.
Ingredients
- 2 venison steaks
- 1 Tbsp olive oil
- salt and ground pepper
- 2 shallots, sliced
- For the sauce:
- 2 Tbsp cranberry sauce
- zest and juice of Β½ orange
- zest and juice of Β½ lemon
- 1 tsp grated ginger
- 2 tsp Dijon mustard
- 50 ml red port
Instructions
- Using a citrus zest, remove the rind of the lemon and and orange.
- Put the cranberry sauce, ginger, mustard, lemon and orange juice in a pan, bring the boil. Turn off the heat and add the port.
- Heat the oil in a frying pan. Season the venison steaks with salt and pepper and fry them in the hot oil for 4-5 minutes on each side, turning them over every minute. Scatter the shallot pieces around the steaks after 5 minutes of cooking.
- Pour in the port and let it bubble for about 20 seconds. Turn over the steaks to soak up the sauce for another few seconds. Remove the steaks, res t& keep them warm, then reduce the sauce into a thick jus.
- Serve immediately with the sauce poured over the venison.
