Vermicelli upma

Background
This Vermicelli upma recipe can be served as a snack or breakfast. It is quick and easy to make and above all takes very little time to prepare. It tastes delicious as it is but can be served with coconut chutney too. There are many variations how to make it, this is just one of them.
Ingredients
- 1½ Cups Vermicelli
- Water as required
- Salt as required
- 1 Green chilli (Chopped)
- 1" Ginger (Thinly chopped)
- 1 Onion (Chopped)
- 1 Tomato (Chopped)
- 1 tsp Lemon juice (optional)
- 2 tsp Oil
- 1 tsp Mustard seeds
- A sprig of curry leaves
Instructions
- Heat up a bowl full of water in a kettle and place this water on the stove for boiling with some salt.
- Add vermicelli to it and let it cook until soft.
- Strain this water and run the vermicelli under cold water.
- In a separate pan, heat the oil and add the mustard seeds and let them splutter.
- Add the chopped onion, curry leaves, ginger, green chilli and turmeric. Let the onions become soft.
- Add the tomato and fry until they become soft.
- Finally, add the cooked vermicelli to it and mix.
- Add the lemon juice after removing the dish from the flame and mix and serve hot.
Tips
- There are many variations to this dish. It will be more tasty if other vegetables like carrot, peas, beans, etc are added to it.
- It can also be made plain without adding tomato or vegetables.
