Walnut brownies

Background
These walnut brownies are really easy to make! They go so well with winter tea and coffee, or can be served as snack at parties during the festivities. You can use gluten-free flour or ground almonds if you like.
Ingredients
- 200g good quality dark chocolate
- 150 soft brown sugar
- 3 eggs
- ½ cup of oil or melted butter
- 30g cocoa powder
- 1 tsp vanilla essence
- 1-2 tsp dark rum (optional)
- 80g flour
- ½ tsp baking powder
- 150g walnut kernels
Instructions
- Preheat the oven to 180°C.
- Grease a 22 cm square baking tray and line it with baking paper.
- Dry-fry the walnuts until golden and fragrant. When cool, chop them into small pieces.
- Meanwhile melt the chocolate in a glass bowl over boiling water, cool it and stir in the rum (if used).
- Break the eggs into a large bowl, slightly beat them, then add the vanilla and sugar. Mix well. Gently fold in the melted chocolate, stir.
- Sieve the flour, cocoa powder and baking powder onto the mixture. Gently fold in. Finally add the walnuts, then transfer into the baking tray. Spread it out evenly.
- Bake in the oven for about 25 -30 minutes.
- When the top is nicely browned, remove from the oven and leave to cool in the tray.
- When completely cooled, cut into squares.
Tips
- Before slicing the brownie-cake up, put in the freezer for ten minutes - this helps to stop it being too crumbly!
- Brownies shouldn't cook through properly like a sponge-cake - but should remain a bit gooey in the middle.
