Background
This walnut & caramelised shallot pesto is super easy to make, it’s vegan, dairy-free, gluten-free so suitable for most diets. Most importantly it’s super yummy - perfect sauce for pasta or grilled meat/fish, or on pizza, puff tartlets and so on. Keep it chilled in a jar until needed.
Ingredients
- 1 small bunch of basil
- 1 clove of garlic, minced
- 2 Tbsp olive oil
- 1 Tbsp caramelised shallot paste
- 1 handful walnuts
- ½ lemon zest and juice
- Salt & pepper
Instructions
- Put all ingredients in a mortar and grind with the pestle until you get a coarse paste. Alternatively, put them into a small food processor and pulse for a few seconds (don’t overmix).
- Taste and season with salt and pepper - you can add a pinch of dried chilli flakes if you want to spice it-up.
- Adjust the oil and lemon according to your main dish.
- Serve it with pasta or a sauce over grilled meat.
