Warm lentil, tomato and spinach salad

Background
This warm lentil, tomato and spinach salad is a super healthy dish that can be served as a main or a side dish with sausage, steak and so on. You can turn it into a super-fast dish,by using using tinned, pre-cooked lentils - in which case just rinse and add them to the sautéed onion.
Ingredients
- 150g green lentils
- 1 clove of garlic
- ½ stick of celery
- 1 Tbsp olive oil
- 1 small red onion
- 100g baby spinach leaves
- 100g cherry tomatoes
- 1 Tbsp chopped fresh basil leaves
- 1 Tbsp chopped fresh flat-leaf parsley
- 1Tbsp chopped fresh mint leaves
- 1 Tbsp lemon juice
- salt and freshly ground black pepper
Instructions
- Cook the lentils, garlic and celery in a pot of water until tender. This should take about 25 minutes. Drain any excess water from the lentils and set them aside. Discard the celery.
- Meanwhile slice the onion and cut the cherry tomatoes in half.
- Heat the olive oil in a large frying pan over medium. Add the onion and cook until softened, for about 5 minutes.
- Add the spinach and cook for 2 minutes, until just wilted.
- Add the tomatoes, lentils & herbs and stir well. Cook for a couple of minutes until warmed through, then stir in the lemon juice.
- Season with salt and pepper.
