Background
This a lovely and refreshing salad - fantastic on hot days! You can use lemon instead of lime or sprinkle some seeds or nuts over it. Ideal as a starter at dinner parties or just a healthy snack during the day.
Ingredients
- ½ cucumber
- ¼ watermelon
- 1 lime
- 100g Feta cheese
- 1 handful of watercress
Instructions
- De-seed the watermelon, cut the flesh into bite-sized cubes .
- Thinly slice the cucumber and mix with the watermelon..
- Sprinkle with watercress and crumble some feta on top.
- Squeeze a little lime juice over it.
