Zesty tenderstem broccoli

Background
If you want a quick and easy side dish to accompany pan-fried, griddled, baked, roasted or barbecued meat or fish, the recipe for this deliciously zesty tenderstem broccoli could come in very handy. Given that the blanching of the broccoli can be done in advance, it’s an ideal dish for dinner parties too!
Ingredients
- 200g tender-stem (or purple) broccoli
- 1 red chilli, thinly sliced
- Zest & juice of ½ (unvaxed) lemon
- ½ Tbsp olive oil
Instructions
- Put the broccoli into a pan of lightly salted, boiling water and blanch it for 2 minutes. Drain and rinse with cold water. Set aside.
- 5 minutes before serving your main dish heat the oil in a wok or a deep frying pan. When the oil is piping hot, add the chilli slices and, after a few seconds, the broccoli. Put a lid on and steam for 3 minutes, while shaking the wok a couple of times.
- Remove the lid, stir in the lemon zest and juice.
- Serve immediately.
