Background
This is a lovely vegetarian pasta. It's ready to eat within 15 minutes so it's ideal for lunch or supper on busy days. You can serve it as a side dish too with grilled/fried fish or meat.
Ingredients
- 300g broccoli florets
- 2 tsp olive oil
- 2 cloves of garlic
- 1 red chilli
- 50g walnut
- Grated zest and juice of 1 lemon
- 2 Tbsp grated Parmesan cheese
- 400g pasta
Instructions
- Cook the pasta according to the instructions on the pack, then drain and keep warm in the saucepan.
- Meanwhile, blanch or steam the broccoli for 2-3 minutes, then drain.
- Slice the garlic thinly. Deseed the chilli, remove the veins then cop the flesh. Chop roughly the walnuts.
- Heat a wok well then add the oil in stir-fry the garlic, chilli and broccoli for 1-2 minutes.
- Add the lemon zest and juice then the walnuts. Stir-fry for one more minute.
- Stir through the pasta, toss together. Season to taste.
- Serve with some cheese sprinkled on top.
Tips
If you've not got a wok you can use your deepest frying pan. But do get a wok they're quite cheap and very useful & healthy!© 2024 Copyright CookTogether
