Zingy chicken drumsticks
Background
If you need a quick and easy BBQ marinade for chicken – try this recipe! It's super easy to prepare, can be done the night, a couple of hours or just 15 minutes before you turn on the barbie. The drumstick are delicious cold too, so any leftover is perfect for a picnic or trips. Serve with side dishes of your choice.
Ingredients
- 8 drumsticks
- Grated zest and juice of 1 lemon
- 2 Tbsp olive oil
- 2 cloves of garlic, minced
- 1 Tbsp oregano or chopped rosemary leaves
- 1 tsp salt
- 1 tsp ground pepper
- Pinch of cayenne (optional)
Instructions
- Put the chicken into a plastic bag (like a freezer bag).
- Mix the ingredients in a smallish bowl then pour over the drumsticks. Tie the bag and massage the chicken legs thoroughly.
- Marinate in refrigerator for minimum 15 minutes, preferably 2 hours or overnight.
- Barbecue or grill he drumsticks until cooked through properly and lightly charred.
- Serve warm or at room temperature.
