Chinese-style braised red cabbage

Background
Roast or fried duck is normally served with braised red cabbage. If you're cooking an Asian-spiced duck, this Chinese-style braised red cabbage would go very well with it. It also makes a really good sandwich filler!
Ingredients
- 500g red cabbage
- 1 red chilli
- 2 cm ginger
- 2 star anise
- 1 clove garlic
- 3 Tbsp rice vinegar
- 1 Tbsp soy sauce
- 1-2 Tbsp palm sugar (to taste)
- 2 spring onions
- 1 Tbsp sesame seeds
- 1½ tsp sesame oil
Instructions
- Thinly slice the cabbage.
- Cut the chilli in half, remove the seeds and vein, then chop it finely. Peel the ginger and thinly slice. Chop the garlic.
- Put all the ingredients (except the sesame seeds, oil and spring onions) in a large, heavy-based pan. Put the lid on then braise over medium heat for 10-15 minutes.Take the lid off and cook gently for another another 15-20 minutes until the liquid has completely evaporated.
- Meanwhile, slice the spring onions diagonally and dry-fry the sesame seeds until golden. Add half of these to the cabbage, toss well.
- Serve the braised cabbage with the oil drizzled over it and the remaining sesame seeds and spring onion slices scattered on the top.
