Mince pie croffle
Background
If you don’t have time to bake mince pies, or your oven doesn’t work or is in use - just take out your waffle iron to make mince pie croffles. It’s so easy, crunchy and yummy. You can make big ones or small ones, using Christmas cutters – such as heart, moon, snowman, bell, Xmas tree etc. I like having this mince pie croffle with my morning coffee on Christmas Day and Boxing Day, but you can serve it with a mug of hot chocolate or mulled wine in the evening too!
Ingredients
- 1 ready rolled puff pastry
- 1 jar mincemeat
- Icing sugar
Instructions
- Cut two identical star shapes from the puff pastry – make sure they fit in the waffle maker, allowing for the pastry to expand.
- Spread mincemeat on one star, then put the other one on top, squeezing the two pastry pieces together with your fingers.
- Heat he waffle maker, then place the stuffed star in the middle.
- Put the lid on and cook for 3-5 minutes until the outside is golden brown. If you want it more crispy, cook it a bit longer.
- Transfer it to a plate, dust it with icing sugar and serve warm.
- Reroll the remaining pastry and make more mince pie croffles.
- Depending on your waffle maker you could make 2 or 4 croffles at ones - cut the pastry to fit in the iron plates.
- Dust them with icing sugar then serve.
