Background

This Mussel & Rainbow Chard Stir Fry was originally an experiment using what happened to be in the fridge to put together a meal but, as so often with a quick wok creation, it was simply delicious and well received. Not only is it tasty but the colourful chard makes it looks really pretty too!

Ingredients

200g cooked mussels
4 large spring onions
3 cloves garlic
1 Tbsp oil
150g rainbow chard
2 tsp sesame oil
Marinade: 1 Tbsp light soy sauce
1 Tbsp oyster sauce
a large pinch of sugar

Instructions

Wash & drain the mussels and place in a bowl with the marinade.
Peal & finely chop the garlic. Chop the white (and a bit of the green!) of the onion fairly fine. Add to the bowl and stir together.
Roughly chop the chard and put aside.
Heat the wok until its nice & hot then add the oil. When it starts to smoke, tip in the bowl contents including the marinade. Stir fry for a minute, then add the chard and continue stirring for a couple of minutes as it wilts.
Stir in the sesame oil then serve immediately with rice or noodles.

Tips

I find groundnut (peanut) oil works best in a hot wok - but obviously not if you're allergic!
