Background

This spicy red cabbage and carrot slaw is a perfect sandwich filler or a side salad for grilled steak or fish. It’s ready under 10 minutes. Perfect for parties and picnics too.

Ingredients

2 carrots
½ red cabbage
1 small or ½ big red onion
handful of coriander leaves
handful toasted peanuts or cashew nuts
1 red chilli (de-seeded)
juice of 1 lime
2 tsp groundnut oil
1 tsp soft unrefined sugar

Instructions

Finely shred the cabbage and carrots. Finely slice the onion. Put these in a bowl and toss.
Chop the coriander, nuts and chilli. Add these to the salad.
Mix the lime juice, oil and sugar together with a pinch of salt. Pour this over the salad and toss well.
