Goat’s cheese & red pepper egg muffins
Background
These low-carb goat’s cheese & red pepper egg muffins are perfect for a light brunch or lunch, served with a crispy salad. Alternatively, serve them as party nibbles or picnic snack - or take them with you to work in your lunchbox. They are super easy to make, delicate and delicious.
Ingredients
- 4 large eggs
- 50g goats cheese
- 2 Tbsp chopped chives
- 1 grilled/roasted red pepper
- Salt and pepper
- Butter or oil
- Chopped chives to garnish
Instructions
- Preheat the oven to 180°C.
- Grease a 6 hole muffin tin with oil and butter.
- Chop the bell pepper into small bits.
- Whisk the eggs with the chives and 4 pinches of salt. Season with ground pepper.
- Divide the egg mixture between the muffin holes. Drop a few pieces of the chopped peppers into each hole, then crumble some goat's cheese on top - they will sink into the egg mixture.
- Put the tin in the oven and bake for about 20 minutes until golden.
- Let them cool in the tin (they will collapse a bit) then transfer them to a plate.
- Serve warm or at room temperature.
